About the Design: Madeira is a fortified wine made on the Portuguese Island of Madeira which is located about 300 miles off the coast of Morocco. It can range from sweet to dry and is mainly made from Tinta Negra Mole, Sercial, Verdelho, Bual & the Malvasia grape varieties.

The process behind making Madeira hasn't changed in over 300 years & involves a technique most winemakers try to avoid. The grapes are harvested early so that they retain a high amount of acidity, they are then crushed, pressed & fermented. Fermentation is stopped by the addition of distilled grapes (fortifying) & then the wine is deliberately heated & cooled as well as exposed to oxygen throughout the aging process using one of two methods. The Estufa Method leaves wine in heated tanks for 3 months while the Canteiro Method involves leaving barrels of wine in heated rooms, up in the rafters of the winery or even outside where temps naturally fluctuate.

These aging methods allow the wine to oxidize at a slow rate leaving behind delicious & complex flavors of burnt caramel, walnut, hazelnut, coffee, baking spices, peaches & orange zest. Due to the aging process, a vintage of unopened Madeira can last for centuries. You can even buy bottles from the 1850s (& older) to drink today!
